Topsham,
Devon January 21, 2009 -- We enjoyed this delicious apple
cake outdoors on a cold winter's night, under the apple trees, washed
down with Alastair's mulled cider during this year's Topsham
Wassail.
Here's Lizzie's recipe.
175g plain flour
50g whole wheat flour
1.5 tsp bicarb
1/4 tsp salt
1 tsp ground cinnamon
1 tsp mixed spice
100g raw brown sugar
100g butter/margarine
300g cooking/eating apples
1 free range egg (beaten)
Grease
and line the base of a 7.5" or 19cm square cake tin. In
a basin combine the flour, salt, cinnamon, mixed spice and sugar. Rub
in the butter/margarine until the mixture resembles fine crumbs. Wash,
core and roughly chop the apples then add the apples and beaten egg to
the mixture and stir quickly to combine. Spread evenly in the tin and
bake in the oven at 190 DegC (375 Deg F, Gas Mark 5) for about half an
hour until risen and firm to the touch. Allow to cool in the tin before
cutting into squares. Serves about 6. Enjoy with mulled cider.
